Growth and a Mystery

In the past month, I've planted 3 varieties of peas, onion sets, fava beans, and spinach directly into the garden.  Half of my 1,000 square
foot main garden is planted.  The other day I was happy to find some growth.  Peas have sprouted and are pushing up out of the ground.
The peas in the top picture remind me of hands, but the one here is spreading its leaves out and is much more plant-like.
Spinach seeds have also germinated, and I'm seeing lots of little sprouts like this one.
Sometimes it gets hard to tell weeds and plant sprouts apart, but never spinach.  It's very distinctive spear-shaped first leaves are pretty impossible to misidentify.
However, I have no clue about this clump of stuff.  I saw green peeking out of some leaves in the garden, and uncovered this mass of sprouting leaves.  I ate a leaf, and it was not bitter.  It did not have any arugula flavor.  It was mild like lettuce.
Here is a shot of the stems.  It reminds me a little of the Chinese Cabbage that I grew 2 years ago. I'm unsure.  Any suggestions as to what this might be are appreciated.

  1. Our move in date is May 16th... So I don't think much of a garden will be happening this summer, bummer. ): I've read on the farmers almanac that it would be just barely past the date for transplanting cucumbers and eggplant... so I might try it... Any suggestions for the fall though?

  2. May 16 will give you plenty of time to grow a bunch of things...our first frost is usually end of October. I'd go for green beans, squash (summer and winter types), cukes, maters...you would have a lot of options. I would plant lettuce and spinach later for the fall. Don't try them in late May.

  3. That looks like Dandelion that had fertility shots. Leaves are a dead ringer but the stems are too numerous. Could it be endive or some other green? At this early stage most leaves are sweet on young plants. Dandelion tastes good anyway. Although it is the bane of most yard nazis it is a wonderful addition to any salad, although there is little reason to grow it in the garden when it is available in the front lawn.
